{"id":881,"date":"2015-02-14T19:19:56","date_gmt":"2015-02-15T01:19:56","guid":{"rendered":"http:\/\/tiffanycooks.cyberphreak.com\/?p=881"},"modified":"2018-03-23T07:45:47","modified_gmt":"2018-03-23T12:45:47","slug":"atks-zucchini-bread","status":"publish","type":"post","link":"https:\/\/tiffanycooks.cyberphreak.com\/?p=881","title":{"rendered":"ATK&#8217;s Zucchini Bread *"},"content":{"rendered":"<div class=\"pf-content\"><p><a href=\"http:\/\/tiffanycooks.cyberphreak.com\/wp-content\/uploads\/2015\/02\/americas-test-kitchen-zucchini-bread.jpg\"><img loading=\"lazy\" class=\"alignnone size-full wp-image-883\" src=\"http:\/\/tiffanycooks.cyberphreak.com\/wp-content\/uploads\/2015\/02\/americas-test-kitchen-zucchini-bread.jpg\" alt=\"americas-test-kitchen-zucchini-bread\" width=\"282\" height=\"280\" srcset=\"https:\/\/tiffanycooks.cyberphreak.com\/wp-content\/uploads\/2015\/02\/americas-test-kitchen-zucchini-bread.jpg 282w, https:\/\/tiffanycooks.cyberphreak.com\/wp-content\/uploads\/2015\/02\/americas-test-kitchen-zucchini-bread-150x150.jpg 150w\" sizes=\"(max-width: 282px) 100vw, 282px\" \/><\/a><\/p>\n<p>This photo is courtesy of America&#8217;s Test Kitchen -Cook&#8217;s Illustrated. \u00a0My bread turned out slightly under-cooked and wasn&#8217;t as presentable as I normally like so I&#8217;ll just use a stock photo until I can re-make it again. \u00a0It&#8217;s very delicious bread. \u00a0I never knew zucchini could work so well into a dessert type bread! \u00a0I cooked it for the full time and even followed the directions for the toothpick coming out with just a few crumbs attached, but it tricked me. \u00a0So later, I had to cut it into slices and re-bake on a baking sheet, which helped. \u00a0<strong>I think the problem was I could only twist and drain so much moisture out of the shredded zucchini. \u00a0Next time I will use an orange squeezer to get more moisture out.<\/strong>\u00a0 My 8 year old loved it &#8211; but then again, it is more desserty vs. a hard sell. \u00a0Enjoy!<\/p>\n<p>INGREDIENTS:<\/p>\n<ul>\n<li>1 1\/2 lbs. zucchini shredded<\/li>\n<li>1 1\/4 cups packed (8 3\/4 oz.) brown sugar<\/li>\n<li>1\/4 cup vegetable oil<\/li>\n<li>2 large eggs<\/li>\n<li>1 tsp. vanilla extract<\/li>\n<li>1 1\/2 cups (7 1\/2 oz.) all-purpose flour<\/li>\n<li>1\/2 cup (2 3\/4 oz.) whole-wheat flour<\/li>\n<li>1 T. ground cinnamon**<\/li>\n<li>1 1\/2 tsp. salt<\/li>\n<li>1 tsp. baking powder<\/li>\n<li>1 tsp. baking soda<\/li>\n<li>1\/2 tsp. ground nutmeg<\/li>\n<li>2\/3 cup walnuts (toasted and chopped), optional<\/li>\n<li>1 T. granulated sugar<\/li>\n<li>Chocolate chips are a great addition (optional)**<\/li>\n<\/ul>\n<p><strong><span style=\"color: #ff0000;\">**Known IC irritants, tread carefully!
