and it only uses one egg (my husband&#8217;s allergic).\u00a0 I had tried the blueberry and chocolate chip variation before, but this time I tried the orange cranberry and used dried cranberries instead.\u00a0 It turned out beautifully!\u00a0 I&#8217;m including the recipe page with variations.\u00a0 Just be careful to follow the recipe changes correctly!\u00a0 What I like is that they are not too sweet.\u00a0 They freeze beautifully!\u00a0 This recipe is true to nature, it only makes 12 so if you want more, double it.<br \/>\n<\/strong><\/p>\n<p><strong>INGREDIENTS:<\/strong><\/p>\n<ul>\n<li><strong>3\/4 cup milk<\/strong><\/li>\n<li><strong>1 tablespoon grated orange peel*<\/strong><\/li>\n<li><strong>1\/4 cup vegetable oil<\/strong><\/li>\n<li><strong>1 large egg<\/strong><\/li>\n<li><strong>2 cups all-purpose flour<\/strong><\/li>\n<li><strong>1\/2 cup sugar<\/strong><\/li>\n<li><strong>2 teaspoons baking powder<\/strong><\/li>\n<li><strong>1\/2 teaspoon salt<\/strong><\/li>\n<li><strong>1 cup coarsely chopped cranberries (fresh or dried works).*<\/strong><\/li>\n<\/ul>\n<p>*Known IC irritants!<\/p>\n<p><strong>DIRECTIONS:<\/strong><\/p>\n<ol>\n<li><strong>Heat oven to 400\u00b0 F.\u00a0 Grease bottoms only of 12 medium muffin cups with shortening, spray with cooking spray or line with paper cups.<\/strong><\/li>\n<li><strong>In large bowl, beat milk, orange peel, oil, egg with fork or wire whisk until well mixed.\u00a0 <\/strong><\/li>\n<li><strong>Stir in flour, sugar, baking powder, and salt all at once <span style=\"text-decoration: underline;\">just until flour is moistened.\u00a0 Fold in 1 cup coarsely chopped cranberries.\u00a0 (Batter will be lumpy).<\/span>\u00a0 *If you over mix, the tops will be unattractively peaked.*<\/strong><\/li>\n<li><strong>Divide batter evenly among muffin cups. <\/strong><\/li>\n<li><strong>Bake 20-25 minutes or until golden brown.\u00a0 If baked in greased pan , let stand about 5 minutes in pan, then remove from pan to wire rack.\u00a0 If baked in paper cups, immediately remove from pan to wire rack.\u00a0 Serve warm if desired. <\/strong><\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<p><a href=\"http:\/\/tiffanycooks.cyberphreak.com\/wp-content\/uploads\/2013\/07\/P1100018-small.jpg\"><img loading=\"lazy\" class=\"alignnone size-medium wp-image-89\" src=\"http:\/\/tiffanycooks.cyberphreak.com\/wp-content\/uploads\/2013\/07\/P1100018-small-800x684.jpg\" alt=\"P1100018-small\" width=\"800\" height=\"684\" \/><\/a><\/p>\n<p><strong><br \/>\n<\/strong><\/p>\n<\/div>","protected":false},"excerpt":{"rendered":"<p>&nbsp;
