{"id":852,"date":"2015-01-22T20:15:07","date_gmt":"2015-01-23T02:15:07","guid":{"rendered":"http:\/\/tiffanycooks.cyberphreak.com\/?p=852"},"modified":"2018-03-22T21:30:08","modified_gmt":"2018-03-23T02:30:08","slug":"dilled-potato-and-green-bean-salad","status":"publish","type":"post","link":"https:\/\/tiffanycooks.cyberphreak.com\/?p=852","title":{"rendered":"Dilled Potato and Green Bean Salad * (Not IC Safe)"},"content":{"rendered":"<div class=\"pf-content\"><p><a href=\"http:\/\/tiffanycooks.cyberphreak.com\/wp-content\/uploads\/2015\/01\/dill-potato-green-bean-salad-Jan.jpg\"><img loading=\"lazy\" class=\"alignnone size-full wp-image-853\" src=\"http:\/\/tiffanycooks.cyberphreak.com\/wp-content\/uploads\/2015\/01\/dill-potato-green-bean-salad-Jan.jpg\" alt=\"dill-potato-green-bean-salad-Jan\" width=\"720\" height=\"960\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<p>Here&#8217;s a very scrumptious carb and vegetable combo side. \u00a0You have the perfectly cooked red potatoes with the fresh green beans mixed together in a savory red wine vinegar\/oil sauce similar to a German potato salad flavor. \u00a0Since the &#8220;six medium potatoes&#8221; is a little vague of a measurement, I used four medium potatoes because that looked like enough potatoes for four servings. \u00a0Don&#8217;t use frozen green beans here, this is a 100% fresh-from-the-produce-section recipe. \u00a0This recipe was from <a href=\"http:\/\/www.dailybitesblog.com\/2010\/06\/08\/dilled-potato-and-green-bean-salad\/\">Daily Bites Blog -click here.<\/a>\u00a0 I omitted the scallions and added more dill and parsley. \u00a0Enjoy!<\/p>\n<p>&nbsp;<\/p>\n<p>INGREDIENTS:<\/p>\n<ul>\n<li>6 medium red-skinned potatoes, scrubbed and cut into 1-inch chunks<\/li>\n<li>1\/2 lb. green beans, trimmed and cut into 2-inch pieces<\/li>\n<li>2 scallions, white and green parts thinly sliced**<\/li>\n<li>1\/4 cup parsley, finely chopped<\/li>\n<li>2 tbs. fresh dill, chopped (from about 4-5 sprigs)<\/li>\n<li>2 tbs. extra virgin olive oil<\/li>\n<li>2 tbs. red wine vinegar**<\/li>\n<li>Sea salt and black pepper, to taste**<\/li>\n<\/ul>\n<p><strong><span style=\"color: #ff0000;\">**Known IC irritants, tread carefully!<\/span><\/strong><\/p>\n<p>DIRECTIONS:<\/p>\n<ol>\n<li>Cover potatoes by 2-inches with cold water\u00a0in a large pot. Bring to a boil over high heat. Cook at a rolling boil for 7 minutes.<\/li>\n<li>Add green beans; continue to boil for 5 minutes or until potatoes are just tender when pierced with a knife but not falling apart. They will continue to soften a bit as they cool, so do not\u00a0overcook them. Drain vegetables well.<\/li>\n<li>Toss boiled vegetables with scallions and herbs <span style=\"color: #ff0000;\">(see hint below)<\/span>. Drizzle with oil and vinegar. Season to taste with salt and pepper. If the salad needs more kick, add additional vinegar and salt. If it\u2019s too tangy or salty, add an extra splash of olive oil.<\/li>\n<li><span style=\"color: #ff0000;\">My added hint: Don&#8217;t mix too much while this mixture is piping hot. \u00a0Even if you don&#8217;t overcook the potatoes, if you mix hot potatoes round and round with the sauce, your potatoes will get mushy. \u00a0So let it cool slightly and gently fold veggies &amp; sauce together.\u00a0<\/span><\/li>\n<li>Serve warm, room\u00a0temperature, or chilled.
