{"id":766,"date":"2014-11-13T09:14:20","date_gmt":"2014-11-13T15:14:20","guid":{"rendered":"http:\/\/tiffanycooks.cyberphreak.com\/?p=766"},"modified":"2018-03-22T21:53:44","modified_gmt":"2018-03-23T02:53:44","slug":"pumpkin-chocolate-chip-brownies","status":"publish","type":"post","link":"https:\/\/tiffanycooks.cyberphreak.com\/?p=766","title":{"rendered":"Pumpkin Chocolate Chip Brownies * (Not IC Safe)"},"content":{"rendered":"<div class=\"pf-content\"><p><a href=\"http:\/\/tiffanycooks.cyberphreak.com\/wp-content\/uploads\/2014\/11\/pumpkin-choc-chip-brownies.jpg\"><img loading=\"lazy\" class=\"alignnone size-full wp-image-767\" src=\"http:\/\/tiffanycooks.cyberphreak.com\/wp-content\/uploads\/2014\/11\/pumpkin-choc-chip-brownies.jpg\" alt=\"pumpkin-choc-chip-brownies\" width=\"750\" height=\"1000\" \/><\/a><\/p>\n<p>OK I swore I wouldn&#8217;t bake, BUT:<\/p>\n<p><b>a.)<\/b> I had exactly 1\/2 cup pumpkin puree staring me down in the fridge that was going to spoil,<\/p>\n<p><strong>b.)<\/strong> it has pumpkin and pumpkin is a vegetable,<\/p>\n<p><strong>c.)<\/strong> I didn&#8217;t have to get out any special bakingware for this (I used my 11&#8243;x7&#8243; glass pan),<\/p>\n<p><strong>d.)<\/strong> I divided it into 12 servings and each serving was 4 Weight Watchers Plus Points so it&#8217;s very DOABLE! \u00a0I\u00a0don&#8217;t even feel like cheating and going back for another, one is enough! \u00a0So there&#8217;s the justification!<\/p>\n<p>The recipe says it can make 24 small brownies, but we&#8217;re talking sub-toddler small in size and that doesn&#8217;t work for me. \u00a0Maybe it works for a mouse. \u00a0 It makes 12 sizable brownies that you&#8217;d actually want to eat &#8211; about 3 1\/2&#8243; by 1 3\/4&#8243;.<\/p>\n<p><span style=\"color: #ff0000;\">Source: \u00a0\u00a0<a style=\"color: #ff0000;\" href=\"http:\/\/smallhomebigstart.com\/2010\/10\/pumpkin-brownies.html\">From Small Home Big Start.\u00a0<\/a>\u00a0 She has better and many more pictures than me. \ud83d\ude42<\/span><\/p>\n<p>INGREDIENTS:<\/p>\n<ul>\n<li>1\/2 cup pumpkin puree<\/li>\n<li>1 whole egg<\/li>\n<li>2 egg WHITES<\/li>\n<li>1 T. veg. or canola oil<\/li>\n<li>1 cup white flour<\/li>\n<li>1 tsp. baking powder<\/li>\n<li>1 tsp. unsweetened cocoa powder**<\/li>\n<li>1\/2 tsp. ground cinnamon**<\/li>\n<li>1\/2 tsp. ground allspice**?<\/li>\n<li>1\/4 tsp. ground nutmeg<\/li>\n<li>1\/4 tsp. salt<\/li>\n<li>2\/3 cup brown sugar, packed<\/li>\n<li>1\/2 cup semisweet chocolate chips (I used minis)**<\/li>\n<\/ul>\n<p><strong><span style=\"color: #ff0000;\">**Known IC irritants, tread carefully!<\/span><\/strong><\/p>\n<p>DIRECTIONS:<\/p>\n<ol>\n<li>Preheat oven to 350 degrees. \u00a0(After using an <a href=\"http:\/\/www.amazon.com\/gp\/product\/B00125TABM\/ref=oh_aui_search_detailpage?ie=UTF8&amp;psc=1\">inexpensive, &lt;$5 oven thermometer recommended by America&#8217;s Test Kitchen,<\/a> I found that my newer oven runs 25 degrees too cool so I set my oven to 375.)<\/li>\n<li>Line a 11&#8243; x 7&#8243; pan with parchment paper (NOT WAX PAPER, IT&#8217;LL MELT!)<\/li>\n<li>In a large bowl, combine pumpkin puree, eggs, and oil until smooth. Set aside.<\/li>\n<li>In a separate medium bowl, mix together the flour, baking powder, spices, salt, and brown sugar.<\/li>\n<li>Add to the wet ingredients and mix until thoroughly incorporated.<\/li>\n<li>Stir in the chocolate chips.<\/li>\n<li>Pour into prepared pan and spread evenly.<\/li>\n<li>Bake for 15-20 minutes or until passes toothpick test.<\/li>\n<li>Cool completely before cutting (If you can wait, I couldn&#8217;t).<\/li>\n<\/ol>\n<\/div>","protected":false},"excerpt":{"rendered":"<p>OK I swore I wouldn&#8217;t bake, BUT: a.)
