{"id":687,"date":"2014-09-04T14:22:09","date_gmt":"2014-09-04T19:22:09","guid":{"rendered":"http:\/\/tiffanycooks.cyberphreak.com\/?p=687"},"modified":"2015-11-17T19:31:50","modified_gmt":"2015-11-18T01:31:50","slug":"knead-not-sourdough-bread","status":"publish","type":"post","link":"https:\/\/tiffanycooks.cyberphreak.com\/?p=687","title":{"rendered":"Knead Not Sourdough Bread"},"content":{"rendered":"<div class=\"pf-content\"><p><a href=\"http:\/\/tiffanycooks.cyberphreak.com\/wp-content\/uploads\/2014\/09\/P1000959.jpg\"><img loading=\"lazy\" class=\"alignnone size-medium wp-image-690\" src=\"http:\/\/tiffanycooks.cyberphreak.com\/wp-content\/uploads\/2014\/09\/P1000981-800x600.jpg\" alt=\"P1000981\" width=\"800\" height=\"600\" srcset=\"https:\/\/tiffanycooks.cyberphreak.com\/wp-content\/uploads\/2014\/09\/P1000981-800x600.jpg 800w, https:\/\/tiffanycooks.cyberphreak.com\/wp-content\/uploads\/2014\/09\/P1000981.jpg 1000w\" sizes=\"(max-width: 800px) 100vw, 800px\" \/><\/a><\/p>\n<p><a href=\"http:\/\/tiffanycooks.cyberphreak.com\/wp-content\/uploads\/2014\/09\/P1000959.jpg\"><img loading=\"lazy\" class=\"alignnone size-medium wp-image-688\" src=\"http:\/\/tiffanycooks.cyberphreak.com\/wp-content\/uploads\/2014\/09\/P1000959-800x600.jpg\" alt=\"P1000959\" width=\"800\" height=\"600\" srcset=\"https:\/\/tiffanycooks.cyberphreak.com\/wp-content\/uploads\/2014\/09\/P1000959-800x600.jpg 800w, https:\/\/tiffanycooks.cyberphreak.com\/wp-content\/uploads\/2014\/09\/P1000959.jpg 1000w\" sizes=\"(max-width: 800px) 100vw, 800px\" \/><\/a> <a href=\"http:\/\/tiffanycooks.cyberphreak.com\/wp-content\/uploads\/2014\/09\/P1000980.jpg\"><img loading=\"lazy\" class=\"alignnone size-medium wp-image-689\" src=\"http:\/\/tiffanycooks.cyberphreak.com\/wp-content\/uploads\/2014\/09\/P1000980-800x600.jpg\" alt=\"P1000980\" width=\"800\" height=\"600\" srcset=\"https:\/\/tiffanycooks.cyberphreak.com\/wp-content\/uploads\/2014\/09\/P1000980-800x600.jpg 800w, https:\/\/tiffanycooks.cyberphreak.com\/wp-content\/uploads\/2014\/09\/P1000980.jpg 1000w\" sizes=\"(max-width: 800px) 100vw, 800px\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<p>THIS IS AN AMAZING SOURDOUGH BREAD. \u00a0It tastes professional! \u00a0I had always wanted to make sourdough bread, but I let cooking fear get the best of me, and I put it off for years. \u00a0After &#8216;mastering&#8217; other yeast recipes, I gained the courage to try this recipe, which honestly looked a lot easier than other sourdough bread recipes! \u00a0I only had to simplify one step (the tea towel step) because the last thing you want is dough on a towel &#8211; I speak from experience &#8211; it&#8217;s a pain to launder, if you can! \u00a0So I came up with my own step (using sprayed plastic wrap). \u00a0ENJOY!<\/p>\n<p>INGREDIENTS:<\/p>\n<ul>\n<li>17 1\/2 ounces bread flour, plus extra for shaping later (Don&#8217;t sub any other flour, I weighed the flour).<\/li>\n<li>1\/4 tsp. active-dry yeast<\/li>\n<li>2 1\/2 tsp. kosher salt<\/li>\n<li>12 ounces filtered water, (room temp is just fine)<\/li>\n<li>2 T. cornmeal<\/li>\n<li>Nonstick spray, like PAM<\/li>\n<\/ul>\n<p>DIRECTIONS:<\/p>\n<ol>\n<li>Whisk together the flour, yeast, and salt in a large mixing bowl.<\/li>\n<li>Add the water and stir until combined. \u00a0Cover the bowl with plastic wrap and <strong><span style=\"text-decoration: underline;\"><span style=\"color: #ff0000; text-decoration: underline;\">allow to sit at room temperature for 19 hours.<\/span> <\/span>\u00a0<\/strong>(Yes, it&#8217;s a waiting game, so plan ahead. \u00a0But remember you don&#8217;t even need to check on it during this stage!)<\/li>\n<li>After 19 hours, turn the dough out onto a lightly floured work surface. \u00a0Punch down the dough with your fist (to release trapped air) and turn it over onto itself a couple of times.<\/li>\n<li>Cover with nonstick-sprayed plastic wrap, or a clean tea towel, and allow to rest 15 minutes.<\/li>\n<li>After 15 minutes, shape the dough into a ball. \u00a0Coat hands with flour, if needed, to prevent sticking.<\/li>\n<li>Sprinkle the nonstick-sprayed plastic wrap with half of the cornmeal and lay the dough on top of it, seam side down.<\/li>\n<li>Sprinkle the top of the dough with the other half of the cornmeal and cover with nonstick-sprayed plastic wrap, or a clean tea towel (see my second photo for details!)<\/li>\n<li>Allow to rise for another 2-3 hours, or until the dough has approximately doubled in size.<\/li>\n<li>While the dough is rising the second time, preheat the oven to 450 degrees F.<\/li>\n<li>Place a 4-5 QT.
