{"id":63,"date":"2013-07-28T22:23:46","date_gmt":"2013-07-29T03:23:46","guid":{"rendered":"http:\/\/tiffanycooks.cyberphreak.com\/?p=63"},"modified":"2018-03-23T07:52:29","modified_gmt":"2018-03-23T12:52:29","slug":"banana-oat-muffins","status":"publish","type":"post","link":"https:\/\/tiffanycooks.cyberphreak.com\/?p=63","title":{"rendered":"Banana Oat Muffins * (Not IC Safe)"},"content":{"rendered":"<div class=\"pf-content\"><p><strong><a href=\"http:\/\/tiffanycooks.cyberphreak.com\/wp-content\/uploads\/2013\/07\/oatmealchocmuffin-small.jpg\"><img loading=\"lazy\" src=\"http:\/\/tiffanycooks.cyberphreak.com\/wp-content\/uploads\/2013\/07\/oatmealchocmuffin-small-800x600.jpg\" alt=\"oatmealchocmuffin-small\" width=\"800\" height=\"600\" \/><\/a><\/strong><\/p>\n<p>&nbsp;<\/p>\n<p><strong>I like<\/strong> <strong>to make some healthy dessert options when I can to offset the more decadent ones.<strong>\u00a0 This is from a cookbook called &#8220;Fast Fix Family Food&#8221; by Better Homes and Gardens.\u00a0 <\/strong>These banana oat muffins are definitely on the healthy side but the chocolate chips and sweet banana flavor offset that.\u00a0 I knew I should have added vanilla for a little more flavor, but this is one I want to try again.\u00a0 I did the food processor trick of processing the rolled oats because I did not have oat bran.\u00a0 I used chocolate, next time I will try raisins. I used 2% milk. (I always use muffin cups!\u00a0 It beats cleaning off a crusty muffin pan any day.)\u00a0 Finally, not to toot my own horn&#8230;okay, I will.\u00a0 I think my photo looks more appetizing than theirs!<\/strong><\/p>\n<p><strong>INGREDIENTS:<\/strong><\/p>\n<ul>\n<li><strong>Nonstick cooking spray<\/strong><\/li>\n<li><strong>1 1\/2 cups oat bran*<\/strong><\/li>\n<li><strong>1 cup all-purpose flour<\/strong><\/li>\n<li><strong>2 teaspoons baking powder<\/strong><\/li>\n<li><strong>1\/2 teaspoon salt<\/strong><\/li>\n<li><strong>1\/4 teaspoon baking soda<\/strong><\/li>\n<li><strong>1 egg slightly beaten<\/strong><\/li>\n<li><strong>3\/4 cup mashed ripe banana<\/strong><\/li>\n<li><strong>1\/2 cup fat-free milk <\/strong><\/li>\n<li><strong>1\/4 cup honey<\/strong><\/li>\n<li><strong>2 tablespoons cooking oil<\/strong><\/li>\n<li><strong>1\/2 cup semisweet chocolate pieces or raisins**<\/strong><\/li>\n<\/ul>\n<p><strong>*If you don&#8217;t have oat bran, place 2 cups regular rolled oats in a food processor.\u00a0 Cover and process until finely ground.<\/strong><\/p>\n<p><span style=\"color: #ff0000;\"><strong>**Known IC irritants, tread carefully!<\/strong><\/span><\/p>\n<p><strong>DIRECTIONS:<\/strong><\/p>\n<ol>\n<li><strong>Preheat oven to 400\u00b0 F.<\/strong><\/li>\n<li><strong>Lightly coat the bottoms of 12 2.5&#8243; muffin cups with spray, set aside. (Or use muffin liners).<\/strong><\/li>\n<li><strong>In a bowl, stir together oat bran, flour, baking powder, salt, and baking soda.\u00a0 Make a well in the center of the flour mixture; set aside.<\/strong><\/li>\n<li><strong>In a small bowl, stir together egg, banana, milk, honey, and oil.\u00a0<\/strong><\/li>\n<li><strong> Add banana mixture to well in flour mixture.<\/strong><\/li>\n<li><strong>Stir just until moistened (battery should be lumpy).\u00a0 Fold in chocolate pieces.<\/strong><\/li>\n<li><strong>Spoon batter into the prepared muffin cups. <\/strong><\/li>\n<li><strong>Bake 14-16 minutes or until golden and a wooden toothpick inserted in center comes out clean.\u00a0 Cool on a wire rack.
