recipe that adds the flavor of cornmeal to the mix! \u00a0It&#8217;s yummy and has that cornmeal crunch! \u00a0I used a mixture of fresh raspberries and frozen, but you could do all fresh or all frozen too! \u00a0It&#8217;s okay to mash the fresh raspberries a little if you want a more unified flavor.\u00a0 I sprinkled the tops with Turbinado sugar. \u00a0A+!<\/p>\n<p><span style=\"color: #ff0000;\">&#8212;&#8212;PLEASE MAKE SURE YOU TOLERATE RASPBERRIES BEFORE MAKING THIS. THEY ARE ON THE &#8216;TRY IT&#8217; LIST.\u00a0 MY ADVICE WOULD BE TO TRY JUST A FEW (MAYBE 3-5) WITHOUT OTHER IRRITATING FOODS AND SEE HOW YOU HANDLE IT.\u00a0<\/span><\/p>\n<p>INGREDIENTS:<\/p>\n<ul>\n<li class=\"ingredient\" style=\"color: #000000;\"><span class=\"amount\">1 And 1\/2 Cups\u00a0<\/span><span class=\"name\">All Purpose Flour<\/span><\/li>\n<li class=\"ingredient\" style=\"color: #000000;\"><span class=\"amount\">3\/4 Cup\u00a0<\/span><span class=\"name\">Cornmeal<\/span><\/li>\n<li class=\"ingredient\" style=\"color: #000000;\"><span class=\"amount\">3\/4 Cup\u00a0<\/span><span class=\"name\">Sugar<\/span><\/li>\n<li class=\"ingredient\" style=\"color: #000000;\"><span class=\"amount\">3 Teaspoons\u00a0<\/span><span class=\"name\">Baking Powder<\/span><\/li>\n<li class=\"ingredient\" style=\"color: #000000;\"><span class=\"amount\">1 Teaspoon\u00a0<\/span><span class=\"name\">Baking Soda<\/span><\/li>\n<li class=\"ingredient\" style=\"color: #000000;\"><span class=\"amount\">1\/4 Teaspoon\u00a0<\/span><span class=\"name\">Salt<\/span><\/li>\n<li class=\"ingredient\" style=\"color: #000000;\"><span class=\"amount\">1 Cup fresh r<\/span><span class=\"name\">aspberries (Can Use Frozen too, but no not thaw them!)<\/span><\/li>\n<li class=\"ingredient\" style=\"color: #000000;\"><span class=\"amount\">1 And 1\/4 Cups\u00a0<\/span><span class=\"name\">Almond Milk, or regular milk\u00a0<\/span><\/li>\n<li class=\"ingredient\" style=\"color: #000000;\"><span class=\"amount\">1\/4 Cup vegetable oil<\/span><\/li>\n<li class=\"ingredient\" style=\"color: #000000;\"><span class=\"amount\">1 Teaspoon\u00a0<\/span><span class=\"name\">Vanilla Extract<\/span><\/li>\n<li class=\"ingredient\" style=\"color: #000000;\">Turbinado sugar, or brown sugar to coat the tops before baking<\/li>\n<li><\/li>\n<\/ul>\n<p>NOTES:<\/p>\n<p>**This recipe originally had orange zest, apple cider vinegar, but they had to removed to be IC safe. See how you handle vanilla extract, for me it&#8217;s irritating. If irritating to you, omit it.<\/p>\n<p><span style=\"color: #000000;\"><strong>If tolerated, vanilla almond milk works well in this recipe!<\/strong> \u00a0<\/span><\/p>\n<p>&nbsp;<\/p>\n<div class=\"ERInstructionsHeader\" style=\"font-weight: bold; color: #000000;\">DIRECTIONS:<\/div>\n<div class=\"ERInstructionsHeader\" style=\"font-weight: bold; color: #000000;\"><\/div>\n<div class=\"instructions\" style=\"color: #000000;\">\n<ol>\n<li class=\"instruction\">Preheat oven to 400F for 15 minutes. Grease or line a 12-cup muffin tin with paper liners.<\/li>\n<li class=\"instruction\">In a large bowl combine together the dry ingredients. Take 2 tablespoons of this mixture and<\/li>\n<li class=\"instruction\">combine it with the berries, in a separate bowl. This will avoid the berries from sinking to the bottom of the muffins.<\/li>\n<li class=\"instruction\">In another bowl whisk together the milk, oil, and vanilla extract.<\/li>\n<li class=\"instruction\">Gently fold in the wet ingredients into the dry mixture. Stir in the berries. Do not over mix the batter.<\/li>\n<li class=\"instruction\">Spoon the batter into the prepared muffin tins, about 2\/3rds full. I got only 11 muffins for the above measurement.<\/li>\n<li class=\"instruction\">Sprinkle some Turbinado or brown sugar on top of the muffins.<\/li>\n<li class=\"instruction\">Bake for about 15-20 minutes or until a toothpick inserted in the center of the muffin comes out clean.<\/li>\n<li class=\"instruction\">Transfer to a wire rack and let it cool for at least 5 minutes before removing from the pan.<\/li>\n<\/ol>\n<\/div>\n<div style=\"color: #000000;\">\n<div class=\"ERTastesHeader\" style=\"font-weight: bold;\">TASTE:<\/div>\n<div class=\"ERTastes\">\n<ol>\n<li class=\"taste\">These muffins had a very nice texture from the cornmeal. The quantity of sugar mentioned in the original recipe is 1\/2, which is what I used and felt that it could use some more sugar.
