{"id":505,"date":"2014-04-04T09:22:16","date_gmt":"2014-04-04T14:22:16","guid":{"rendered":"http:\/\/tiffanycooks.cyberphreak.com\/?p=505"},"modified":"2018-03-23T07:50:21","modified_gmt":"2018-03-23T12:50:21","slug":"energy-balls-granola-bites","status":"publish","type":"post","link":"https:\/\/tiffanycooks.cyberphreak.com\/?p=505","title":{"rendered":"&#8220;Energy Balls&#8221; &#8211; Oatmeal Bites *"},"content":{"rendered":"<div class=\"pf-content\"><p><a href=\"http:\/\/tiffanycooks.cyberphreak.com\/wp-content\/uploads\/2014\/04\/1978550_10203660290097501_88301805_o.jpg\"><img loading=\"lazy\" src=\"http:\/\/tiffanycooks.cyberphreak.com\/wp-content\/uploads\/2014\/04\/1978550_10203660290097501_88301805_o-800x600.jpg\" alt=\"1978550_10203660290097501_88301805_o\" width=\"800\" height=\"600\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<p><a href=\"http:\/\/tiffanycooks.cyberphreak.com\/wp-content\/uploads\/2014\/04\/135268_10203660290217504_828705787_o.jpg\"><img loading=\"lazy\" class=\"alignnone wp-image-506\" src=\"http:\/\/tiffanycooks.cyberphreak.com\/wp-content\/uploads\/2014\/04\/135268_10203660290217504_828705787_o-800x600.jpg\" alt=\"135268_10203660290217504_828705787_o\" width=\"800\" height=\"600\" srcset=\"https:\/\/tiffanycooks.cyberphreak.com\/wp-content\/uploads\/2014\/04\/135268_10203660290217504_828705787_o-800x600.jpg 800w, https:\/\/tiffanycooks.cyberphreak.com\/wp-content\/uploads\/2014\/04\/135268_10203660290217504_828705787_o-1365x1024.jpg 1365w, https:\/\/tiffanycooks.cyberphreak.com\/wp-content\/uploads\/2014\/04\/135268_10203660290217504_828705787_o.jpg 2048w\" sizes=\"(max-width: 800px) 100vw, 800px\" \/><\/a><\/p>\n<p>I made these as a way to give my growing boy some needed calories but in a tasty way.\u00a0 I learned a few things by making it so I know what to do better next time.\u00a0 First, I am glad I made a half batch, it made 25!\u00a0 Secondly, I tried reducing the honey but it needed all of it to bind together.\u00a0 Thirdly, I will reduce the chocolate chips next time because it definitely was in the &#8216;dessert&#8217; category more than I liked.\u00a0 As written, I&#8217;m placing this in the dessert category.\u00a0 But if the chocolate chips were reduced, I&#8217;d place it in the Snacks section.\u00a0 So halving the chocolate chips to 1\/4 cup (for a half batch) would be fine.\u00a0 I didn&#8217;t use the shredded coconut because a) I didn&#8217;t have it and b) I don&#8217;t have many fans here.\u00a0 I used ground flax seed, cashews, peanuts, creamy peanut butter, raisins, and everything seen in the photo.\u00a0 I got this recipe from the Washington Post.\u00a0 <strong><span style=\"color: #ff0000;\">I would definitely try this next time in the food processor for ease!<\/span><\/strong>\u00a0 Enjoy!<\/p>\n<p>INGREDIENTS (FULL BATCH ingredients below, I halved these amounts):<\/p>\n<ul data-id=\"nogrouping\">\n<li>1 cup <strong>peanut butter,<\/strong> sunflower butter or almond butter<\/li>\n<li>1 cup raw or regular honey (start with less if regular honey and add more if needed)<\/li>\n<li>3 cups rolled oats<\/li>\n<li>1\/2 cup ground chia seed or <strong>flax seed<\/strong><\/li>\n<li>1 cup <strong>mini chocolate chips<\/strong> or cacao nibs**<\/li>\n<li>1 cup any combination of nuts, seeds and soft dried fruit, <strong>raisins**, cashews\/peanuts,<\/strong> such as sunflower seeds, and dried cranberries**<\/li>\n<li>Sweetened shredded coconut, for rolling (optional)<\/li>\n<\/ul>\n<p><strong><span style=\"color: #ff0000;\">**Known IC irritants, tread carefully!<\/span><\/strong><\/p>\n<p>&nbsp;<\/p>\n<p>DIRECTIONS:<\/p>\n<div>\n<ol>\n<li>Combine the nut butter and honey in a large mixing bowl and stir until smooth.<\/li>\n<li>Gradually add the oats and chia seed or flax seed. Add the cacao nibs or chocolate chips and the nut-seed-fruit mixture, and mix gently to combine.<\/li>\n<li>Use your hands to roll the mixture into balls<strong> (I used a cookie scoop)<\/strong> approximately the size of ping-pong balls. If desired, roll them in shredded coconut.<\/li>\n<li>Place the balls in paper mini-muffin cups. At this point, you can eat them, but they&#8217;ll be less sticky after a night in the refrigerator.
