{"id":450,"date":"2014-03-13T12:56:38","date_gmt":"2014-03-13T17:56:38","guid":{"rendered":"http:\/\/tiffanycooks.cyberphreak.com\/?p=450"},"modified":"2015-02-11T06:52:06","modified_gmt":"2015-02-11T12:52:06","slug":"stuffed-pepper-soup","status":"publish","type":"post","link":"https:\/\/tiffanycooks.cyberphreak.com\/?p=450","title":{"rendered":"Stuffed Pepper Soup"},"content":{"rendered":"<div class=\"pf-content\"><p><a href=\"http:\/\/tiffanycooks.cyberphreak.com\/wp-content\/uploads\/2014\/03\/Stuffed-Pepper-Soup-Angie.jpg\"><img loading=\"lazy\" class=\"alignnone  wp-image-451\" src=\"http:\/\/tiffanycooks.cyberphreak.com\/wp-content\/uploads\/2014\/03\/Stuffed-Pepper-Soup-Angie-800x600.jpg\" alt=\"Stuffed Pepper Soup Angie\" width=\"800\" height=\"600\" srcset=\"https:\/\/tiffanycooks.cyberphreak.com\/wp-content\/uploads\/2014\/03\/Stuffed-Pepper-Soup-Angie-800x600.jpg 800w, https:\/\/tiffanycooks.cyberphreak.com\/wp-content\/uploads\/2014\/03\/Stuffed-Pepper-Soup-Angie.jpg 1000w\" sizes=\"(max-width: 800px) 100vw, 800px\" \/><\/a><\/p>\n<p>We really love this savory recipe!\u00a0 It&#8217;s basically everything that&#8217;s great about stuffed pepper soup with less work.\u00a0 The original recipe called for 2 cups raw rice, but after making this recipe with 1 cup raw rice, you will find it is more than enough!\u00a0 ENJOY!<\/p>\n<p>Serve 6<br \/>\n398 cals 5.6g fat (1.9g saturated) (without cheese)<\/p>\n<p>INGREDIENTS:<\/p>\n<ul>\n<li>1lb LEAN ground beef<\/li>\n<li>1 lg onion, diced <strong>(WE USED ONION POWDER)<\/strong><\/li>\n<li>1 cup white or wild rice<\/li>\n<li>1 14.5 oz. can Hunts flavored diced tomatoes (Red pepper and fennel, roasted garlic, sweet onion etc) <strong>(I USED PLAIN JUST FINE)<\/strong><\/li>\n<li>1 can tomato sauce (14.5oz can)<\/li>\n<li>1 tsp dried oregano<\/li>\n<li>1 tsp dried basil<\/li>\n<li>\u00bd tsp salt<\/li>\n<li>\u00bc tsp pepper<\/li>\n<li>1 box chicken stock (32oz)<\/li>\n<li>2 cups water<\/li>\n<li>2 tbsp powdered beef stock<\/li>\n<li>3 bell peppers, any color<\/li>\n<li>Cheese for topping (optional)<\/li>\n<li>Fresh cracked black pepper for garnish (optional)<\/li>\n<\/ul>\n<p>DIRECTIONS:<\/p>\n<ol>\n<li>In a large soup pot coated with cooking spray, over medium-high heat, brown the grown beef with the onions and rice. I know that sounds odd, but browning the rice gives it a nice nutty flavor \u2013 do not allow it to burn!<\/li>\n<li>Meanwhile dice your peppers into small \u00bd&#8221; pieces, set side.<\/li>\n<li>Add in the diced tomatoes, tomato sauce, oregano, basil, salt, pepper, chicken stock, water, and powdered beef stock, then allow it to come to a boil.<\/li>\n<li>Reduce heat, cover and allow it to cook 20 minutes then add the peppers and allow it to cook another 20-30 minutes (some types of rice may need longer cooking times).<\/li>\n<li>Serve with cheese on top (optional).<\/li>\n<\/ol>\n<\/div>","protected":false},"excerpt":{"rendered":"<p>We really love this savory recipe!\u00a0 It&#8217;s basically everything that&#8217;s great about stuffed pepper soup with less work.\u00a0 The original recipe called for 2 cups raw rice, but after making this recipe with 1 cup raw rice, you will find it is more than enough!\u00a0 ENJOY!
