{"id":393,"date":"2014-01-04T18:48:07","date_gmt":"2014-01-05T00:48:07","guid":{"rendered":"http:\/\/tiffanycooks.cyberphreak.com\/?p=393"},"modified":"2014-01-04T18:48:07","modified_gmt":"2014-01-05T00:48:07","slug":"chef-johns-crispy-onion-rings-that-stay-crispy","status":"publish","type":"post","link":"https:\/\/tiffanycooks.cyberphreak.com\/?p=393","title":{"rendered":"Chef John&#8217;s Crispy Onion Rings (That Stay Crispy!)"},"content":{"rendered":"<div class=\"pf-content\"><p><a href=\"http:\/\/tiffanycooks.cyberphreak.com\/wp-content\/uploads\/2014\/01\/Chef-John-onion-rings.jpg\"><img loading=\"lazy\" class=\"alignnone size-full wp-image-394\" alt=\"Chef-John-onion-rings\" src=\"http:\/\/tiffanycooks.cyberphreak.com\/wp-content\/uploads\/2014\/01\/Chef-John-onion-rings.jpg\" width=\"750\" height=\"1000\" \/><\/a><\/p>\n<p>This was one of those magical cooking moments.\u00a0 Don&#8217;t ask me why a person, me, who can&#8217;t be around raw onion could eat cooked onion rings, but it was great, crispy, and better than a restaurant!\u00a0 My husband cooked these while I was in another room.\u00a0 They were extremely crispy and stayed that way hours later.\u00a0 They were the best I&#8217;ve ever tasted.\u00a0 We didn&#8217;t have club soda so we used chilled beer, it worked fine.\u00a0 <strong><span style=\"text-decoration: underline;\">The panko really works here, don&#8217;t substitute it!<\/span><\/strong>\u00a0 A+!<\/p>\n<ul>\n<li id=\"liIngredient\" data-ingredientid=\"1684\" data-grams=\"62.5\"><label><label><\/label><\/label>1\/2 cup all-purpose flour<\/li>\n<li id=\"liIngredient\" data-ingredientid=\"1636\" data-grams=\"32\"><label><label><\/label><\/label>1\/4 cup cornstarch<\/li>\n<li id=\"liIngredient\" data-ingredientid=\"4457\" data-grams=\"6.343612\"><label><label><\/label><\/label>2 tablespoons dry potato flakes<\/li>\n<li id=\"liIngredient\" data-ingredientid=\"16407\" data-grams=\"0.225\"><label><label><\/label><\/label>1\/8 teaspoon cayenne pepper, or to taste<\/li>\n<li id=\"liIngredient\" data-ingredientid=\"3478\" data-grams=\"251.6\"><label><label><\/label><\/label>1 cup chilled club soda<\/li>\n<\/ul>\n<ul>\n<li id=\"liIngredient\" data-ingredientid=\"22318\" data-grams=\"200\"><label><label><\/label><\/label>2 cups panko bread crumbs, or as needed<\/li>\n<li id=\"liIngredient\" data-ingredientid=\"20482\" data-grams=\"440\"><label><label><\/label><\/label>2 cups vegetable oil for frying<\/li>\n<li id=\"liIngredient\" data-ingredientid=\"4397\" data-grams=\"300\"><label><label><\/label><\/label>2 large onions, cut into 1\/4-inch thick slices and separated into rings<\/li>\n<li id=\"liIngredient\" data-ingredientid=\"16421\" data-grams=\"1\"><label><label><\/label><\/label>fine salt to taste<\/li>\n<\/ul>\n<h3>Directions<\/h3>\n<ol>\n<li>Whisk together flour, cornstarch, dry potato flakes, and cayenne pepper in a large bowl. Whisk in club soda to make a smooth batter.<\/li>\n<li>Place panko bread crumbs in a shallow bowl.<\/li>\n<li>Heat oil in a deep fryer or large saucepan to 350 degrees F (175 degrees C).<\/li>\n<li>Place a few onion rings at a time into the bowl of batter and turn to coat all sides with batter.<\/li>\n<li>Remove onion rings from batter and place into pan of panko bread crumbs; turn to coat completely with crumbs.<\/li>\n<li>Cook a few rings at a time in the hot oil until golden brown, about 2 to 3 minutes.<\/li>\n<li>Transfer to a cooling rack set over paper towels to drain.
