{"id":266,"date":"2013-10-12T11:39:20","date_gmt":"2013-10-12T16:39:20","guid":{"rendered":"http:\/\/tiffanycooks.cyberphreak.com\/?p=266"},"modified":"2018-03-22T21:46:58","modified_gmt":"2018-03-23T02:46:58","slug":"lentil-soup","status":"publish","type":"post","link":"https:\/\/tiffanycooks.cyberphreak.com\/?p=266","title":{"rendered":"Lentil Soup With Ham * (Not IC Safe)"},"content":{"rendered":"<div class=\"pf-content\"><p><a href=\"http:\/\/tiffanycooks.cyberphreak.com\/wp-content\/uploads\/2013\/10\/P1090480.jpg\"><img loading=\"lazy\" class=\"alignnone size-full wp-image-267\" src=\"http:\/\/tiffanycooks.cyberphreak.com\/wp-content\/uploads\/2013\/10\/P1090480.jpg\" alt=\"P1090480\" width=\"800\" height=\"600\" \/><\/a><\/p>\n<p><strong>This is a very healthy lentil soup that I plan on making again soon.\u00a0 It can either be made with bacon or ham, either way you&#8217;ll love it!\u00a0 I found I had to add additional water. <\/strong><\/p>\n<p><strong>INGREDIENTS:<\/strong><\/p>\n<ul>\n<li><strong>4-5 strips bacon, chopped &#8212;-(Optional, but adds a lot of flavor!)<br \/>\n<\/strong><\/li>\n<li><strong>1 large onion, chopped (I used onion flakes)**<\/strong><\/li>\n<li><strong>3 medium carrots, peeled, halved, lengthwise, and cut into 1\/4 inch half moons (or whatever you like)<\/strong><\/li>\n<li><strong>Add a few stalks chopped celery, if you like (It&#8217;s a great addition).<\/strong><\/li>\n<li><strong>2 cloves garlic, minced (I used garlic powder)<\/strong><\/li>\n<li><strong>2 tablespoons tomato paste (you can definitely use more here, you can substitute 1\/4 cup tomato sauce just fine)**<\/strong><\/li>\n<li><strong>1 1\/2 cups lentils, picked over and rinsed**?<\/strong><\/li>\n<li><strong>1\/2 teaspoon dried thyme<\/strong><\/li>\n<li><strong>3.5 to 4 cups high quality chicken broth (i.e. first ingredient should not be salt!)<\/strong><\/li>\n<li><strong>3 cups water<\/strong><\/li>\n<li><strong>1 T. red-wine vinegar**<\/strong><\/li>\n<li><strong>Coarse salt and fresh ground pepper**<\/strong><\/li>\n<\/ul>\n<p><span style=\"color: #ff0000;\"><strong>**Known IC irritants, tread carefully!<\/strong><\/span><\/p>\n<p><strong>DIRECTIONS:<\/strong><\/p>\n<ol>\n<li><strong>In a Dutch oven or other 5 qt. pot with a tight-fitting lid, cook the bacon until brown and crisp, 8-10 minutes.\u00a0 Pour off all but 1 T. of the fat.\u00a0 <\/strong><\/li>\n<li><strong>Add the onion and carrots (and celery if you desire); cook until softened, about 5 minutes.\u00a0 Stir in garlic, and cook until fragrant, about 30 seconds.\u00a0 <\/strong><\/li>\n<li><strong>Stir in tomato paste, and cook for 1 minute.\u00a0 <\/strong><\/li>\n<li><strong>Add lentils, thyme, broth, and 3.5 to 4 cups of water.\u00a0 Bring to a boil; reduce to a simmer.<\/strong><\/li>\n<li><strong>Cover; cook until lentils are tender, 30-40 minutes.\u00a0 If the soup becomes too thick during cooking, add up to 1 cup more water.\u00a0 <\/strong><\/li>\n<li><strong>Stir in vinegar, 1.5 tsp of salt, and 1\/4 tsp. pepper.\u00a0 Serve the soup immediately.\u00a0<\/strong><\/li>\n<\/ol>\n<\/div>","protected":false},"excerpt":{"rendered":"<p>This is a very healthy lentil soup that I plan on making again soon.\u00a0 It can either be made with bacon or ham, either way you&#8217;ll love it!\u00a0 I found I had to add additional water.
