{"id":1352,"date":"2017-01-21T21:54:11","date_gmt":"2017-01-22T03:54:11","guid":{"rendered":"http:\/\/tiffanycooks.cyberphreak.com\/?p=1352"},"modified":"2018-03-22T15:42:30","modified_gmt":"2018-03-22T20:42:30","slug":"old-school-rice-pudding","status":"publish","type":"post","link":"https:\/\/tiffanycooks.cyberphreak.com\/?p=1352","title":{"rendered":"Old School Simple Rice Pudding *"},"content":{"rendered":"<div class=\"pf-content\"><p><img loading=\"lazy\" class=\"alignnone size-medium wp-image-1353\" src=\"http:\/\/tiffanycooks.cyberphreak.com\/wp-content\/uploads\/2017\/01\/IMG_3302-800x600.jpg\" alt=\"\" width=\"800\" height=\"600\" srcset=\"https:\/\/tiffanycooks.cyberphreak.com\/wp-content\/uploads\/2017\/01\/IMG_3302-800x600.jpg 800w, https:\/\/tiffanycooks.cyberphreak.com\/wp-content\/uploads\/2017\/01\/IMG_3302-768x576.jpg 768w, https:\/\/tiffanycooks.cyberphreak.com\/wp-content\/uploads\/2017\/01\/IMG_3302.jpg 1000w\" sizes=\"(max-width: 800px) 100vw, 800px\" \/> <img loading=\"lazy\" class=\"alignnone size-medium wp-image-1354\" src=\"http:\/\/tiffanycooks.cyberphreak.com\/wp-content\/uploads\/2017\/01\/IMG_20170113_185842-800x800.jpg\" alt=\"\" width=\"800\" height=\"800\" srcset=\"https:\/\/tiffanycooks.cyberphreak.com\/wp-content\/uploads\/2017\/01\/IMG_20170113_185842-800x800.jpg 800w, https:\/\/tiffanycooks.cyberphreak.com\/wp-content\/uploads\/2017\/01\/IMG_20170113_185842-150x150.jpg 150w, https:\/\/tiffanycooks.cyberphreak.com\/wp-content\/uploads\/2017\/01\/IMG_20170113_185842-768x768.jpg 768w, https:\/\/tiffanycooks.cyberphreak.com\/wp-content\/uploads\/2017\/01\/IMG_20170113_185842.jpg 1000w\" sizes=\"(max-width: 800px) 100vw, 800px\" \/><\/p>\n<p>The photos can&#8217;t possibly do this rice pudding justice, but it&#8217;s the best I&#8217;ve ever made! \u00a0I highly recommend making this at least 6-12 hours before you are serving it, preferably a day ahead of time. \u00a0When it&#8217;s fully chilled, the flavor really deepens and becomes perfectly sweet and creamy. \u00a0Just believe me! \u00a0<a href=\"http:\/\/tiffanycooks.cyberphreak.com\/?p=1237\">I use homemade vanilla<\/a> and I doubled the amount of vanilla I added.<\/p>\n<p>As of 3\/2018, I can no longer tolerate vanilla or cinnamon.\u00a0 So, I omit these and it still turns out good, but not as flavorful, of course.<\/p>\n<p><strong>INGREDIENTS:<\/strong><\/p>\n<ul>\n<li data-ingredient=\"medium+grain+rice\"><sup>3<\/sup>\u2044<sub>4\u00a0<\/sub>cup medium grain rice or <sup>3<\/sup>\u2044<sub>4<\/sub> cup long grain rice<\/li>\n<li data-ingredient=\"water\">1 <sup>1<\/sup>\u2044<sub>2\u00a0<\/sub>cups water<\/li>\n<li data-ingredient=\"salt\"><sup>1<\/sup>\u2044<sub>4\u00a0<\/sub>teaspoon salt (heaping)<\/li>\n<li data-ingredient=\"whole+milk\">4 cups whole milk (I use 2%)<\/li>\n<li data-ingredient=\"sugar\"><sup>1<\/sup>\u2044<sub>2\u00a0<\/sub>cup sugar<\/li>\n<li data-ingredient=\"vanilla\"><sup>1<\/sup>\u2044<sub>2\u00a0<\/sub>teaspoon vanilla*<\/li>\n<li data-ingredient=\"cinnamon\">cinnamon (optional)**<\/li>\n<li data-ingredient=\"cinnamon\">whip cream (optional)<\/li>\n<\/ul>\n<p><span style=\"color: #ff0000;\">NOTES: *Vanilla can be an irritant to some, I had to stop using it.\u00a0\u00a0<\/span><\/p>\n<p><span style=\"color: #ff0000;\">**Cinnamon is a known irritant, remove if it bothers you.\u00a0<\/span><\/p>\n<p><strong>DIRECTIONS:<\/strong><\/p>\n<ol>\n<li>Bring rice, water and salt to a boil over med-high heat.<\/li>\n<li>Simmer covered until water has been absorbed (approximately 15 minutes).<\/li>\n<li>Stir in milk and sugar and cook uncovered over medium heat for 30-40 minutes, stirring frequently&#8211;especially towards the end of cooking.<\/li>\n<li>The pudding is done when the rice and milk have amalgamated into a thick porridge-like consistency.<\/li>\n<li>DO NOT OVERCOOK or the pudding will be solid instead of creamy once cooled.<\/li>\n<li>Remove from heat and stir in vanilla.<\/li>\n<li>Pour into a bowl or cups.
