bread &#8211; that&#8217;s all I have to say! \u00a0It&#8217;s perfect. \u00a0<\/span><\/p>\n<p><span style=\"color: #0000ff;\">Obviously, it&#8217;s not a true bread &#8211; it doesn&#8217;t have yeast; it&#8217;s more of a dessert! \u00a0But it gets zucchini into your children, so you can&#8217;t complain too much. \u00a0<\/span><\/p>\n<p><span style=\"color: #0000ff;\">Make sure it&#8217;s fully cooked before removing from oven. \u00a0It shouldn&#8217;t look gooey at all on top. \u00a0I had to bake the two loaves for 1 hour 25 minutes. \u00a0<\/span><\/p>\n<p><span style=\"color: #0000ff;\">This recipe really is easier with the right tools: the food processor, the stand or hand mixer, and the right pans (See link below for the best pan). \u00a0The link goes to an Amazon pan that is very similar to the Williams-Sonoma pan but less than half the price. \u00a0\u00a0<\/span><\/p>\n<p><span style=\"color: #ff0000;\">Warning #1: I consider this a weekend recipe because it does dirty up your food processor, mixer, and more. \u00a0It&#8217;s very worth it, but I wouldn&#8217;t tackle this on a weekday.\u00a0<\/span><\/p>\n<p><span style=\"color: #ff0000;\">Warning #2: Be glad this makes 2 loaves. \u00a0Don&#8217;t halve the recipe. \u00a0Once you taste it, you&#8217;ll \u00a0be glad you listened to me!<\/span><\/p>\n<p>INGREDIENTS:<\/p>\n<ul id=\"lst_ingredients_1\" class=\"checklist dropdownwrapper list-ingredients-1\">\n<li class=\"checkList__line\"><label class=\"checkList__item\"><span class=\"recipe-ingred_txt added\" data-id=\"16317\" data-nameid=\"16317\">3 eggs<\/span><\/label><\/li>\n<li class=\"checkList__line\">1 cup vegetable oil<\/li>\n<li class=\"checkList__line\"><label class=\"checkList__item\"><span class=\"recipe-ingred_txt added\" data-id=\"1526\" data-nameid=\"1526\">2 cups white sugar<\/span><\/label><\/li>\n<li class=\"checkList__line\"><label class=\"checkList__item\"><span class=\"recipe-ingred_txt added\" data-id=\"16424\" data-nameid=\"16424\">1 tablespoon vanilla extract**<\/span><\/label><\/li>\n<li class=\"checkList__line\"><label class=\"checkList__item\"><span class=\"recipe-ingred_txt added\" data-id=\"4529\" data-nameid=\"4529\">3 cups non-peeled, grated zucchini (squeezed in a clean cloth, to remove almost all moisture)<\/span><\/label><\/li>\n<li class=\"checkList__line\"><label class=\"checkList__item\"><span class=\"recipe-ingred_txt added\" data-id=\"1684\" data-nameid=\"1684\">3 cups all-purpose flour<\/span><\/label><\/li>\n<\/ul>\n<ul id=\"lst_ingredients_2\" class=\"checklist dropdownwrapper list-ingredients-2\">\n<li class=\"checkList__line\"><label class=\"checkList__item\"><span class=\"recipe-ingred_txt added\" data-id=\"1416\" data-nameid=\"1416\">3 tablespoons unsweetened cocoa powder**<\/span><\/label><\/li>\n<li class=\"checkList__line\"><label class=\"checkList__item\"><span class=\"recipe-ingred_txt added\" data-id=\"16421\" data-nameid=\"16421\">1 teaspoon salt<\/span><\/label><\/li>\n<li class=\"checkList__line\"><label class=\"checkList__item\"><span class=\"recipe-ingred_txt added\" data-id=\"2359\" data-nameid=\"2359\">1 teaspoon baking soda<\/span><\/label><\/li>\n<li class=\"checkList__line\"><label class=\"checkList__item\"><span class=\"recipe-ingred_txt added\" data-id=\"2356\" data-nameid=\"2356\">1\/4 teaspoon baking powder<\/span><\/label><\/li>\n<li class=\"checkList__line\"><label class=\"checkList__item\"><span class=\"recipe-ingred_txt added\" data-id=\"3819\" data-nameid=\"3819\">1\/2 cup chopped walnuts<\/span><\/label><\/li>\n<li class=\"checkList__line\"><label class=\"checkList__item\"><span class=\"recipe-ingred_txt added\" data-id=\"1338\" data-nameid=\"1338\">1\/2 cup semisweet chocolate chips**<\/span><\/label><\/li>\n<li class=\"checkList__line\"><span style=\"color: #ff0000;\">(Or omit walnuts, and add 1 cup of semisweet chocolate chips)**<\/span><\/li>\n<\/ul>\n<p><span style=\"color: #ff0000;\"><strong>**Known IC irritants, tread carefully!<\/strong><\/span><\/p>\n<p>DIRECTIONS:<\/p>\n<ol>\n<li>Preheat oven to 325 degrees F.<\/li>\n<li>Grease and flour two 4&#8243;x8&#8243; loaf pans. \u00a0(I used PAM for baking spray). \u00a0For best results <a href=\"https:\/\/www.amazon.com\/gp\/product\/B003YKGRKU\/ref=oh_aui_search_detailpage?ie=UTF8&amp;psc=1\">use commercial, heavy weight aluminum pans (click link here to see which one I have). <\/a><\/li>\n<li>Wash zucchini, with green skin on, with warm water and dish soap. \u00a0Rinse thoroughly. \u00a0Dry.<\/li>\n<li>Grate zucchini preferably with a <a href=\"https:\/\/smile.amazon.com\/Cuisinart-9-Cup-Processor-Supreme-Mouth\/dp\/B018HP4UV4\/ref=sr_1_2?ie=UTF8&amp;qid=1469578559&amp;sr=8-2&amp;keywords=cuisinart+9+cup\">food processor.<\/a><\/li>\n<li>Put grated zucchini in a clean cloth and squeeze out almost all the moisture. \u00a0Set aside.<\/li>\n<li>Beat eggs in a large bowl <a href=\"https:\/\/smile.amazon.com\/KitchenAid-KSM150PSGA-Artisan-Pouring-Shield\/dp\/B000BIVIH0\/ref=sr_1_1?ie=UTF8&amp;qid=1469578601&amp;sr=8-1&amp;keywords=kitchenaid+green+mixer\">(or Kitchenaid stand mixer, like mine)<\/a> until light and foamy.<\/li>\n<li>Mix in vegetable oil, sugar, vanilla extract, and grated zucchini until thoroughly combined.<\/li>\n<li>Whisk flour, cocoa powder, salt, baking soda, and baking powder together in separate bowl.<\/li>\n<li>Stir the flour mixture into the zucchini mixture.<\/li>\n<li>Mix in chopped walnuts and chocolate chips. \u00a0(Or do what I did, because I can&#8217;t have walnuts. \u00a0I added 1 cup chocolate chips in total).<\/li>\n<li>Pour the batter into the prepared loaf pans.<\/li>\n<li>Bake in the preheated oven until a toothpick inserted into the center of the loaves comes out clean, about 1 hour. \u00a0(Mine took 1 hour and 25 minutes).<\/li>\n<li>Let cool in pans for 10 minutes before removing, to finish cooling on wire racks.<\/li>\n<\/ol>\n<\/div>","protected":false},"excerpt":{"rendered":"<p>(I should not have peeled the zucchini beforehand &#8212;
