and I&#8217;m not an extreme fan of casseroles, but this one is top notch. \u00a0One of the keys is getting the spinach quite dry. \u00a0I&#8217;m pretty confident you and your family will love this recipe. \u00a0It works well with plain cream cheese (even Neuchatel) or the flavored chive &amp; onion variety. \u00a0Enjoy!<\/p>\n<p><span style=\"color: #ff0000;\">**A can of Hunt&#8217;s basil, garlic, and oregano diced tomatoes work very well here. \u00a0<\/span><\/p>\n<p>INGREDIENTS:<\/p>\n<ul>\n<li>8 oz. uncooked rigatoni (use whole wheat, if you wish)<\/li>\n<li>1 tablespoon extra virgin olive oil<\/li>\n<li>1 cup chopped onion (or use onion powder like I do)<span style=\"color: #ff0000;\">**<\/span><\/li>\n<li>1 (10 oz.) pack frozen spinach, thawed<\/li>\n<li>3 cups cubed, <em>cooked<\/em> chicken breasts<\/li>\n<li>1 (14 oz.) can Italian-style diced tomatoes, undrained<span style=\"color: #ff0000;\">**<\/span><\/li>\n<li>1 (8 oz.) container Philadelphia chive &amp; onion cream cheese (or use plain or Neuchatel).<span style=\"color: #ff0000;\">**<\/span><\/li>\n<li>1\/2 tsp. salt and 1\/2 tsp. freshly ground pepper<span style=\"color: #ff0000;\">**<\/span><\/li>\n<li>1 1\/2 cups shredded mozzarella cheese<\/li>\n<\/ul>\n<p><strong><span style=\"color: #ff0000;\">**Known IC irritants, tread carefully!<\/span><\/strong><\/p>\n<p>&nbsp;<\/p>\n<p>DIRECTIONS:<\/p>\n<ol>\n<li>Prepare rigatoni according to package directions.<\/li>\n<li>Spread oil on bottom of 11&#215;7&#8243; baking dish. \u00a0I used a 9&#215;13&#8243; pan; I like a roomy dish.<\/li>\n<li>Add onion in a single layer. \u00a0Bake at 375 F for 15 minutes or just until tender. \u00a0Transfer onion to large bowl, set aside.<\/li>\n<li>Drain chopped spinach well, pressing between towels.<\/li>\n<li>Stir in rigatoni, spinach, chicken, and next four ingredients into onion in bowl &#8211; OR add your onion powder here.<\/li>\n<li>Spoon mixture into dish and sprinkle evenly with shredded mozzarella cheese.<\/li>\n<li>Bake covered at 375 F for 30 minutes.<\/li>\n<li>Uncover and bake 15 minutes more or until bubbly.<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<\/div>","protected":false},"excerpt":{"rendered":"<p>This is an exceptional, savory, and yummy recipe. \u00a0The textures and flavors melt together so well. \u00a0It&#8217;s one of our favorites &#8211;
