{"id":865,"date":"2015-01-27T17:07:02","date_gmt":"2015-01-27T23:07:02","guid":{"rendered":"http:\/\/tiffanycooks.cyberphreak.com\/?p=865"},"modified":"2015-01-27T17:07:02","modified_gmt":"2015-01-27T23:07:02","slug":"basic-crepe-batter","status":"publish","type":"post","link":"http:\/\/tiffanycooks.cyberphreak.com\/?p=865","title":{"rendered":"Basic Cr\u00eape Batter"},"content":{"rendered":"<div class=\"pf-content\"><p><a href=\"http:\/\/tiffanycooks.cyberphreak.com\/wp-content\/uploads\/2015\/01\/crepes.jpg\"><img loading=\"lazy\" class=\"alignnone size-full wp-image-866\" src=\"http:\/\/tiffanycooks.cyberphreak.com\/wp-content\/uploads\/2015\/01\/crepes.jpg\" alt=\"crepes\" width=\"720\" height=\"960\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<p>I had a very successful cr\u00eape\u00a0experience and wanted to share the recipe and tips. \u00a0This is one of those recipes high in technique so it&#8217;s extra critical to follow the directions to the letter. \u00a0Whether you like them sweet or savory, there&#8217;s a cr\u00eape for you! \u00a0Enjoy!<\/p>\n<p>INGREDIENTS: \u00a0 \u00a0(Makes about 7-10 cr\u00eapes depending upon batter usage, so you can double this if you like).<\/p>\n<ul>\n<li>2 eggs<\/li>\n<li>1\/2 cup milk<\/li>\n<li>1\/2 cup water<\/li>\n<li>1 cup flour<\/li>\n<li>1\/4 tsp. salt<\/li>\n<li>2 T. melted butter<\/li>\n<li>(To make it richer, omit the water and use 1 cup of milk instead. \u00a0This is what I did.)<\/li>\n<li>(To make it sweeter, add 2 T. sugar and 1\/2 tsp. vanilla. \u00a0I did this also.)<\/li>\n<li>(To make it more savory, add 1 T. chopped fresh herbs.)<\/li>\n<\/ul>\n<p>DIRECTIONS:<\/p>\n<ol>\n<li>Blend batter ingredients in a blender until combined.<\/li>\n<li>Let batter stand 30 mins. at room temperature, or cover and chill up to 48 hours. \u00a0(I left mine to refrigerate one day). \u00a0 This gives the flour time to absorb the liquid and the bubbles time to subside.<\/li>\n<li>Heat a nonstick skillet or\u00a0cr\u00eape pan over medium heat. \u00a0Brush <strong>lightly<\/strong> with melted butter or vegetable oil. \u00a0Make sure you brush just a little butter on and you only need to do it every few\u00a0cr\u00eapes, as needed. \u00a0With less butter\/oil, the\u00a0cr\u00eape browns better!<\/li>\n<li>Ladle batter (about 1\/4 cup for an 8&#8243; skillet) in center of pan.<\/li>\n<li>Working quickly, tilt the skillet, and swirl the batter around to coat the entire bottom. \u00a0It should be very thin!<\/li>\n<li>Cook until the edges pull away from the pan, the top loses its sheen, and the bottom is lightly browned, 45 sec to 3 min. depending on your skillet size and heat level. Use a thin heatproof spatula to loosen the\u00a0cr\u00eape from the pan and lift an edge.<\/li>\n<li>Grasp the raised edge with your fingers and flip the\u00a0cr\u00eape over in one quick, fluid motion. You can also use the spatula. \u00a0Cook until the second side is lightly browned, 15 sec to 1 minute more.<\/li>\n<li>Slide the\u00a0cr\u00eape onto a plate. \u00a0Repeat steps 3 to 5 with the remaining batter, buttering the skillet only as needed and stacking the finished\u00a0cr\u00eapes.<\/li>\n<li>Hint: the first\u00a0cr\u00eape is usually garbage because your skillet is getting to the proper temperature, so don&#8217;t give up!<\/li>\n<li>Eat plain or fill with toppings &#8211; sweet, fruity, or savory, roll up and enjoy!<\/li>\n<\/ol>\n<\/div>","protected":false},"excerpt":{"rendered":"<p>&nbsp; I had a very successful cr\u00eape\u00a0experience and wanted to share the recipe and tips. \u00a0This is one of those recipes high in technique so it&#8217;s extra critical to follow the directions to the letter. \u00a0Whether you like them sweet or savory, there&#8217;s a cr\u00eape for you! \u00a0Enjoy!
