\u00a0Enjoy! \u00a0<\/strong><\/p>\n<p><strong>INGREDIENTS:<\/strong><\/p>\n<ul>\n<li><strong>2 tsp. olive oil<\/strong><\/li>\n<li><strong>3 T. finely chopped onion<\/strong><\/li>\n<li><strong>1 (15.5 oz) can black beans, drained and rinsed<\/strong><\/li>\n<li><strong>1 (10 oz) can whole-kernel corn, drained (or frozen corn, thawed)<\/strong><\/li>\n<li><strong>1 T. brown sugar<\/strong><\/li>\n<li><strong>1\/4 cup salsa<\/strong><\/li>\n<li><strong>1\/4 tsp. red pepper flakes<\/strong><\/li>\n<li><strong>2 \u00a0T. butter<\/strong><\/li>\n<li><strong>8 (8 inch) flour tortillas<\/strong><\/li>\n<li><strong>1 1\/2 cups shredded Monterey Jack cheese\u00a0<\/strong><\/li>\n<li>Cilantro optional<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><strong>DIRECTIONS:<\/strong><\/p>\n<ol>\n<li><strong>Heat oil in a large saucepan over medium heat. \u00a0Add onion and cook, stirring, until softened, about 2 mins.\u00a0<\/strong><\/li>\n<li><strong>Stir in beans, corn, sugar, salsa, and pepper; mix well. \u00a0Cook until heated through, about 3 mins.\u00a0<\/strong><\/li>\n<li><strong>Melt 2 tsp. butter in a large skillet over medium heat. \u00a0Put a tortilla in skillet, sprinkle evenly with some cheese (about 1\/3 cup), then top with some bean mixture (about 1\/2 cup).\u00a0<\/strong><\/li>\n<li><strong>Put another tortilla on top, pressing down gently with your palm to seal it, cook until golden, about 1 min.<\/strong><\/li>\n<li><strong>Flip and cook other side.\u00a0<\/strong><\/li>\n<li><strong>Melt more butter as needed, and repeat with remaining tortillas and filling. \u00a0Cut into wedges and serve.\u00a0<\/strong><\/li>\n<\/ol>\n<\/div>","protected":false},"excerpt":{"rendered":"<p>&nbsp; I saw this recipe and knowing most of the quesadillas we make are just cheese and cilantro, I wanted to try something new. \u00a0It was very good. \u00a0I suggest adding cilantro. \u00a0Next time I&#8217;ll add more salsa, that was my only tip!
