{"id":325,"date":"2013-12-13T10:13:43","date_gmt":"2013-12-13T16:13:43","guid":{"rendered":"http:\/\/tiffanycooks.cyberphreak.com\/?p=325"},"modified":"2013-12-13T10:13:43","modified_gmt":"2013-12-13T16:13:43","slug":"heart-healthy-oatmeal-pancakes","status":"publish","type":"post","link":"http:\/\/tiffanycooks.cyberphreak.com\/?p=325","title":{"rendered":"Heart-Healthy Oatmeal Pancakes"},"content":{"rendered":"<div class=\"pf-content\"><p><a href=\"http:\/\/tiffanycooks.cyberphreak.com\/wp-content\/uploads\/2013\/12\/oatmeal-pancakes-12-131.jpg\"><img loading=\"lazy\" class=\"alignnone size-full wp-image-328\" alt=\"oatmeal-pancakes-12-13\" src=\"http:\/\/tiffanycooks.cyberphreak.com\/wp-content\/uploads\/2013\/12\/oatmeal-pancakes-12-131.jpg\" width=\"800\" height=\"600\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<p><a href=\"http:\/\/tiffanycooks.cyberphreak.com\/wp-content\/uploads\/2013\/12\/oatmeal-whole-wheat-pancakes-12-13-13.jpg\"><img loading=\"lazy\" class=\"alignnone size-full wp-image-329\" alt=\"oatmeal-whole-wheat-pancakes-12-13-13\" src=\"http:\/\/tiffanycooks.cyberphreak.com\/wp-content\/uploads\/2013\/12\/oatmeal-whole-wheat-pancakes-12-13-13.jpg\" width=\"600\" height=\"800\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"color: #000000;\"><strong>I think this is a very cool recipe.\u00a0 It&#8217;s from an eggless book I have, as my hubby&#8217;s allergic to eggs.\u00a0 It&#8217;s called The Food Allergy Mama&#8217;s Baking Book by Kelly Rudnicki.\u00a0 This recipe uses NO REFINED WHITE FLOUR.\u00a0 Usually I see healthier recipes that use partial white and wheat flour but this one doesn&#8217;t dabble with refined!\u00a0 The only hint is make the pancakes small, about 1\/4 cup or less, they spread and will get crumbly.\u00a0 This is so healthy (for a pancake) and diabetic-friendly, and carb-friendly!\u00a0 If you&#8217;re eating this way for low carb or diabetic\/prevention reasons, just remember don&#8217;t ruin it with loads of butter or full-sugar syrup.\u00a0 ENJOY!\u00a0 I just did the skillet and did not used the warmed oven.<\/strong><\/span><span style=\"color: #000000;\"><strong>\u00a0Yield about 20 pancakes.\u00a0 I yielded 18.<\/strong><\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"color: #000000;\"><strong>INGREDIENTS:<\/strong><\/span><\/p>\n<ul>\n<li><span style=\"color: #000000;\"><strong>1 cup quick-cooking oatmeal<\/strong><\/span><\/li>\n<li><span style=\"color: #000000;\"><strong>1 cup whole-wheat flour<\/strong><\/span><\/li>\n<li><span style=\"color: #000000;\"><strong>2 tablespoons sugar<\/strong><\/span><\/li>\n<li><span style=\"color: #000000;\"><strong>6 teaspoons baking powder<\/strong><\/span><\/li>\n<li><span style=\"color: #000000;\"><strong>1\/2 teaspoon salt<\/strong><\/span><\/li>\n<li><span style=\"color: #000000;\"><strong>4 tablespoons water (1\/4 cup) <\/strong><\/span><\/li>\n<li><span style=\"color: #000000;\"><strong>1 1\/2 cups milk (or soy or rice milk)<\/strong><\/span><\/li>\n<li><span style=\"color: #000000;\"><strong>4 tablespoons vegetable oil<\/strong><\/span><\/li>\n<\/ul>\n<ol>\n<li><strong>Preheat a cast-iron griddle or similar pan on medium heat until hot, and preheat oven to 200\u00b0 F. <\/strong><\/li>\n<li><strong>Meanwhile, in a large bowl, combine the oatmeal, flour, sugar, baking powder, and salt with a wire whisk.\u00a0 <\/strong><\/li>\n<li><strong>In a large measuring cup, combine the water, soy milk, and oil.<\/strong><\/li>\n<li><strong>Pour the water mixture into the dry ingredients, and mix with a wire whisk until just combined.\u00a0 Do not overmix, a few lumps are fine!<\/strong><\/li>\n<li><strong>Spray the griddle with cooking spray.\u00a0 Pour about 1\/2 cup of batter onto the heated griddle.\u00a0 Cook until small bubbles start to form on top.\u00a0 <\/strong><\/li>\n<li><strong>Flip and cook other side until light brown. <\/strong><\/li>\n<li><strong>Transfer the pancakes to warmed oven and repeat (optional).<\/strong><\/li>\n<\/ol>\n<\/div>","protected":false},"excerpt":{"rendered":"<p>&nbsp;
